Tacos, like the tacos I had in Cancun, Tom's Way
Let's take a trip to deliciousness.
We took a trip to Cancun. Well, my wife and family took a trip to Cancun. Since I already had a vacation, I did not think I would be approved. I was approved at the last minute and had to scramble to get a flight.
I arrived late and the dining rooms at the resort were closed. The front desk recommended that I visit the taqueria on the property.
Great! I fly all the way to Mexico to go to Taco Bell!!??
I was a little bit upset to say the least, but hunger won that battle. On the far end of the property, there was a little shopping area like a tiny village. The resort was really nice. Arrived at the taqueria where there were a few people sitting around trying different things.
Well, these were the best tacos I had ever had. The best ever!
They had a variety of different tacos, the cubed pork was my favorite. El Pastor is something I probably can't do at home, though I’ll start looking for recipes. Maybe I can use the BGE.
There are many places that call themselves taqueria here in the states, and I have not been to many, but Los Gueros has a really good pastor. Try these, they are very close to what I had in Mexico.
To make the tacos in the video:
1 LB (more or less) pork tenderloin - cubed into ¼ inch to 1/8 inch cubes
Juice of 1 or 2 limes
½ teaspoon Onion powder
½ teaspoon Garlic powder
Fresh cilantro (or dried)
½ teaspoon Ground coriander
Fresh ground black pepper
Marinate the cubed pork overnight
Pan fry the cubed pork – season with salt and pepper in the pan
Serve hot on toasted corn or flour tortillas with your favorite taco garnishes and my guacamole
