Pan De Sal Recipe (Pandesal)

Right away it seems like a misnomer, pan de sal because there is only 1 teaspoon of salt in the recipe. But, the sal refers to the salt lining of the original ovens used to bake pan de sal.


So I finally had, “the authentic”, pan de sal. I get it, and now that I’ve tasted it, I can judge if a recipe actually produces what I tasted.


I had pandesal in Manilla, Boracay, and in Leguna, Los Baños.


However, it was at Los Baños where the guy on the tricycle tooted his horn indicating that he had some to sell. Here I had plain pandesal and malunggay Pandesal.


malunggay is a plant from the tropics that is used for flavoring and medicinal.


Of course I started to ask for recipes. Felly said she had a good one that she uses in BC, British Columbia.


Once a saw the recipe, I was pretty sure it would be exactly what I was looking for.


Here is the actual recipe



Obviously, I had to make a video of my own and put this on my blog so that it’s always handy.


Ingredients:


makes about 20, 40Gram rolls


1 1/2 cups all purpose flour + 1 cup for kneading

1 cup bread flour

1 tsp salt

2 tbsp powdered milk

1/4 cup + 1 tbsp sugar

2 tsp instant dry yeast

1/2 cup lukewarm water

1/2 cup lukewarm milk

1/4 cup melted margarine, cooled (I used butter)

1 medium egg (I used a large Egg)

Fine bread crumbs for dredging


Method:


1) Sift the dry ingredients together – flour, sugar, salt, powdered milk – (all except the yeast and bread crumbs)

2) Combine the milk and water and sprinkle the yeast on top

3) Beat the egg

4) Melt the margarine or butter

5) Mix the liquid ingredients

6) Pour the liquid ingredients into the dry ingredients bowl and mix until it forms a dough

7) Turn the dough onto your work surface and knead it lightly using the cup of flour for kneading. Do not exceed this cup. It’s actually better to keep the dough a little on the sticky side.

8) Place the dough in a lightly oiled bowl and let it rise at room temperature until it nearly doubles. Mine took about 2 hours.

9) Form 40 gram balls from the dough

10) Dredge them in the bread crumbs and place them on a lightly oiled baking sheet

11) Cover with plastic.


At this point you have two options


Let them puff up and double in size and then bake them in a 350° Oven for about 12 – 15 minutes, until they are golden


OR


Put them in the fridge over night and then bake them in the morning.
