Oven Roasted Tomatoes

This is one of those things that is so simple, delicious, and a great accompaniment to any dish.


It starts with a few ripe plum tomatoes, though, you really could use any ripe tomato.


Also, you can vary it any way you like, use different herbs and or spices. Add cheese. Add breadcrumbs. Add diced ham or diced crispy bacon. You can go crazy.


This recipe uses:


· 3 ripe plum tomatoes

· Olive oil drizzle

· Tarragon

· Marjoram

· Thyme

· Salt

· Pepper




Preheat the oven to 350°.


Slice a tiny bit off each end of the tomato giving it a flat surface to stand on.


Use a small sharp knife, like a paring knife to poke little slits into the tomato in a zig zag pattern.




Push the knife a little more than half way though the tomato. Rotate the tomato as you poke it. When you have rotated a full 360° You should see a zig zag pattern around the center of the tomato that resembles Charlie Brown’s shirt.




Pull the tomato apart and place it in a no stick skillet. Repeat with the other 2 tomatoes. When you are done, you should have 6 little tomato flowers, that is they look like little flowers.


Drizzle a tiny bit of olive oil on each

tomato.


Lightly sprinkle with salt, pepper, and herbs.


Bake at 350° for about ½ hour. I know I said in the video about 15 minutes, but I actually baked them for ½ hour. It depends on the size of the tomato and desired doneness.


Serve with any of you favorite foods as a beautiful, delicious garnish or accompaniment.


Change it up. Try with different toppings. Italian seasoning, Herbs de Provence, chili, I don’t know, there are too many options.
