Filipino fried rice

This is one of those things that once you’ve had it you love it, but otherwise may have given it a pass, like you would a Kevin Costner movie. Yeah, don’t get me wrong, I’ve enjoyed many Kevin Costner movies, but nowadays, if the subject matter of the movie is not appealing, I’ll pass because it will be 4 hours of my life that I’ll never get back. Different actor, but I still hold a grudge about “The Horse Whisperer”. OMG, Lea fell asleep and I kept watching, waiting for something to happen. That’s 2 hours 49 minutes of my life that I’ll never get back. I get it, he’s a good looking guy, and a great actor, but, I am so uninterested in any of the characters portrayed in that film. I could go so far as to say that I would remove such people from my life.


That all said, a movie that made me cry for many reasons, a movie that really touched me, and made me rethink my life and life decisions, was “The Pursuit of Happiness”. I mention this to illustrate that not every movie that I watch is “Deadpool”, or "Taken", or anything Quentin or Guy.


OK OK, enough rant, this is one of those side dishes or main course that will push your willpower to stop eating. Every time I make ribs, I make sure we have some of this fried rice on the side.


Here’s the recipe to another trip down delicious road.


5 – 8 cups of cooked rice – whatever is left over in the fridge.

5 Chinese sausages sliced thin on the bias

1 or 2 bulbs of garlic (a crap ton of garlic) light crush

1 medium to large onion (can be a yellow onion or a sweet onion) – medium dice

5 or 6 eggs scrambled

2 – 3 tablespoons Peanut oil

¼ - ½ teaspoon Sesame oil

2 – 3 tablespoons Soy sauce (your choice, I used Kikoman but you can use the La Choy style)

1 teaspoon Butter

½ cup green peas

1 teaspoon sesame seeds (optional)

Sprinkle of salt (I would not do it – but it was done for me)

A few grinds of fresh black pepper

(Anything else that you would like to throw in – like bean sprouts, diced ham, pulled pork, whatever is going to please your tongue)


I happened to use Golden Mountain Chinese sausage which seems to be a product of “Wing Wing” - http://www.wing-wing.com/products.php?lang=en


But any Chinese sausage will work, so don’t sweat it if you can’t find the one I used, just make sure it looks similar to the one in the picture.


Place the sliced sausage in a saucepan with a little water. Set it over medium / low heat covered to let the fat render. Keep an eye on the sausage. When the water has evaporated, it will fry in its own fat. Cook till slightly crispy, but do not burn it. Drain it into a sieve over a bowl to let the oil drain off.


While the sausage is cooking, scramble the eggs in the butter and then set aside.


Sauté the garlic in the wok with the peanut oil and sesame oil until it is lightly browned, then push it aside and sauté the onions.


When the onions are soft and start to gain color, add the rice. – about the 10:40 mark on the video.


Keep the rice moving so that it does not stick and to make sure that all of the rice can touch the pan surface to start to gain some color.


When the rice is toasty – it takes a couple of practice runs – add a few splashes of soy sauce. About the 16:40 mark in the video.


Add the sausage and egg. Season with salt and pepper, (I would leave out the salt), add the green peas at the last minute, and then watch how fast it disappears.
