Cucumber Tomato Salad

Keeping with my “quick and easy” theme that is dedicated to Lucifer, my son.

Lucifer is a drummer / bassist / music producer.

This is the perfect blending of acid, alkali, salt, and spices.

This is a fantastic accompaniment to any dish, in this case, we had it with the wings.

The Zatar spice is a key ingredient that makes this salad extra special, but you can do without.

Sometimes, when I make this salad, I need to hide it until the rest of the meal is served, yeah, it’s that good.

Ingredients

One or Two Cucumbers – peeled and diced. (I used English cucumber because I like the seedless quality)

One or two ripe plum tomatoes diced

About 2 or 3 oz of crumbled feta cheese

1-2 TBS good quality extra virgin olive oil

1-2 TBS red wine vinegar

Zatar spice a few generous shakes

Salt and Pepper to taste

Toss and serve
