Wings are super easy and super delicious. Just follow these few tips and you can be a wing master.
Keeping with my “quick and easy” theme that is dedicated to Lucifer, my son.
Lucifer is a drummer / bassist / music producer.
This is one of those things that does not require much effort or attention. Set a timer and that’s it.
It is also, relatively inexpensive. For example, the package of wings I used yielded 16 wings, was just under 5 lbs and cost about $20
Also, if you have a lot of people, you can do this in two baking sheets and put them both in the oven at the same time, probably able to do 40 – 50 wings and 6 – 10 potatoes at the same time.
I used 3 russet potatoes, and then salt, pepper, whatever spices you are in the mood for and some olive oil.
The chicken wings render their fat onto the underlying potatoes thereby roasting / frying the potatoes in a combination of olive oil and chicken fat.
Talk about delicious.
Ingredients:
3 Russet potatoes – about 3 lbs
1 5LB package of chicken wings
Olive oil
Salt / pepper
Onion powder / garlic powder (optional)
Other seasonings (optional)
BBQ Sauce or Buffalo Sauce (optional)
Parchment paper
Preheat oven to 350 º
Peel and dice the potatoes into ¼ - ½ inch cubes or a little bigger. (Does not need to be perfect)
Toss the diced potatoes in a little olive oil – about 2 tablespoons
Line the bottom of the pan with parchment paper
Layer the potatoes at the bottom of the pan on the parchment paper
Season lightly with salt and pepper, and other seasoning if desired.
Layer the wings on top of the potatoes
Season the wings with salt and pepper and other seasonings if desired
Bake at 350º for about an hour. Raise the temperature of the oven to 400º for an additional 15 minutes to crisp up the skin on the wings.
I did mine on the Big Green Egg, but the oven works equally well.
Serve with your favorite sauce

here's a sauce you can make - it's really good
1/2 cup of hickory smoked barbecue sauce
1/4 cup of honey
1 TBS ketchup
1/4 TSP garlic powder
1 TBS butter
